Gluten Free Lemon Cake

Gluten & Lactose Free with Almond Flour

Equipment

  • 1 rectangular cake tin
  • 1 baking sheet
  • 1 bowl
  • 1 whisk manual or electric
  • 1 knife
  • 1 toothpick

Ingredients
  

  • 1 pot coconut yogurt or yogurt of your choice
  • 2 eggs
  • 2 pots gluten free flour
  • 1 pot almond flour
  • 1 pot brown sugar
  • 1 tbsp baking soda
  • 1 tbsp gluten free baking powder
  • 1 lemon's zest
  • 1/2 pot extra virgin olive oil

Instructions
 

  • Pre-heat the oven at 180°C (fan mode)
  • Pour the yogurt into a bowl
  • Add the eggs, flours, olive oil, sugar, baking soda & powder
  • Mix all ingredients with a whisk
  • Grate the lemon's zest and add it to the mixture
  • Pour the mixture into the cake tin with a baking sheet
  • Cut and place 4 lemon slices on top of the mixture
  • Cook in the oven for 30min
  • Check if cooked with a toothpick, if not ready yet, leave it for 5-10 more min
  • Leave it to rest until room temperature is reached
