Gluten Free Lemon Cake
Gluten & Lactose Free with Almond Flour

Equipment
- 1 rectangular cake tin
- 1 baking sheet
- 1 bowl
- 1 whisk manual or electric
- 1 knife
- 1 toothpick
Ingredients
- 1 pot coconut yogurt or yogurt of your choice
- 2 eggs
- 2 pots gluten free flour
- 1 pot almond flour
- 1 pot brown sugar
- 1 tbsp baking soda
- 1 tbsp gluten free baking powder
- 1 lemon's zest
- 1/2 pot extra virgin olive oil
Instructions
- Pre-heat the oven at 180°C (fan mode)
- Pour the yogurt into a bowl
- Add the eggs, flours, olive oil, sugar, baking soda & powder
- Mix all ingredients with a whisk
- Grate the lemon's zest and add it to the mixture
- Pour the mixture into the cake tin with a baking sheet
- Cut and place 4 lemon slices on top of the mixture
- Cook in the oven for 30min
- Check if cooked with a toothpick, if not ready yet, leave it for 5-10 more min
- Leave it to rest until room temperature is reached
