HEALTHY PANCAKES

Gluten free and Lactose free, simple and delicious

Ingredients
  

  • 200 gr oat flakes
  • 2 eggs
  • 200 gr almond milk
  • 1 tsp tahini or olive oil
  • 1 banana or cooked apple
  • 1 tsp baking soda
  • few drops of lemon
  • 1 tsp ghee or butter
  • toppings as you like

Instructions
 

  • Blend the fruit to make a purée
  • Blend the oats for 30 sec to make oat flour
  • Add the eggs, milk, tahini and blend
  • Add the baking soda and squeeze few drops of lemon to activate it and leave for few min
  • Mix and let it rest for 30 min in the fridge
  • Mix again with a spoon, butter a pan and cook few min on each side
  • Serve warm and be creative with the toppings

Notes

Every Sunday, we make pancakes and the whole family and friends enjoy topping them, being extremely creative. One of my favourite is to spread pistachio cream and add fresh seasonal fruit. 
When we are a lot, I use a teppanyaki grill (usually used in the Japanese cooking to sauté vegetables and thin slices of meat). I can cook 5 pancakes at the time!
